Baked Potato Soup

¼ cup butter
1 onion, chopped
¼ cup flour
2 large baking potatoes
Peeled & cubed (1 ½ lbs)
3 cups chicken broth (warmed)
½ cup milk (warmed)
Salt and pepper to taste
Grated cheddar cheese
Sour cream
Bacon, cooked and crumbled
Slivered green onions

Melt butter in a large saucepan over medium heat. Add onion and sauté until tender, about 5 minutes. Stir in flour and cook, stirring constantly, for 1 minute. Add potatoes, chicken broth, milk, salt and pepper. Bring to boil, cover and lower heat. Cook 15 minutes, stirring occasionally to prevent sticking. Taste for seasonings. Serve garnished with cheddar cheese, sour cream, bacon and green onions. (Serves 8)

Make green onion curls by placing in a bowl of ice water for about 30 minutes.
